Description
Creamy, protein-packed, and endlessly customizable, baked cottage cheese eggs are the perfect quick breakfast or meal prep staple.
Ingredients
4 large eggs
1/2 cup full-fat cottage cheese
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
Pinch of smoked paprika
Optional: shredded cheese, cooked veggies, herbs
Instructions
1. Preheat oven to 375°F (190°C).
2. Whisk eggs and cottage cheese until smooth.
3. Stir in seasonings and optional ingredients.
4. Pour into greased dish or muffin tin.
5. Bake 25–30 minutes until center is set.
6. Cool slightly, slice, and serve.
Notes
Store leftovers in the fridge for up to 4 days.
Freeze portions in airtight containers.
Reheat in microwave or air fryer.
