A protein-rich, low-carb baked cottage cheese eggs recipe perfect for breakfast or meal prep. Creamy, fluffy, and endlessly customizable.
Ingredients
6 large eggs
1 cup full-fat cottage cheese
1/2 tsp sea salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 cup chopped spinach (optional)
1/4 cup shredded cheddar (optional)
Butter or spray for greasing
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×8 baking dish.
2. In a blender, combine eggs, cottage cheese, salt, pepper, and garlic powder.
3. Blend until smooth and creamy.
4. Stir in spinach and cheese if using.
5. Pour mixture into prepared dish.
6. Bake for 35–40 minutes or until center is set.
7. Let rest for 5 minutes before slicing and serving.
Notes
You can swap spinach for kale or mushrooms.
Store leftovers in fridge up to 4 days.
Reheat in microwave or oven.
